In this first edition, we take a closer look at one of the most beloved ingredients of all: vanilla.

Today, almost everyone is familiar with the scent and flavour of vanilla. It has become one of the most popular ingredients in modern perfumery, prized for its warmth, sweetness, and comforting character. While many fragrances use synthetic vanilla accords, natural vanilla remains a rare and precious raw material. The production process is labor-intensive and costly, making natural vanilla one of the world's most expensive spices.

Fortunately, some perfumers still choose to work with natural vanilla. These fragrances often reveal a softer, richer, and more nuanced character than their synthetic counterparts, offering depth without becoming overly sharp or sweet.

The Origins of Vanilla

Vanilla comes from the Vanilla planifolia orchid, a climbing plant that thrives in tropical climates. Originally native to Mexico, vanilla is now cultivated in various regions, including South America, the Caribbean, and islands in the Indian Ocean such as Madagascar.

Mexican vanilla is often considered among the finest in the world because Mexico is the plant's orig

inal homeland. However, production there is relatively limited today. Madagascar has become the world's leading producer of vanilla, supplying approximately 1,000 tons of vanilla beans annually. This variety is known as Bourbon Vanilla, named after the former Île Bourbon, now Réunion Island.

Producing natural vanilla is a lengthy and demanding process. The orchid flowers must be pollinated by hand, after which the green pods remain on the vine for eight to nine months before being harvested. They are then carefully cured and dried for several more months, during which the characteristic vanillin crystals develop.

Another highly prized variety is Tahitian Vanilla, grown in French Polynesia. Considered rarer and often more expensive, Tahitian vanilla contains less vanillin but higher levels of heliotropin, giving it a softer, fruitier, and more floral profile. While its flavour is generally milder, its fragrance is often more expressive and complex.

The Effect of Vanilla in Fragrance

Research suggests that vanilla can have a calming and comforting effect, helping to create feelings of relaxation and well-being. It is also believed to stimulate creativity and positive emotions.

In perfumery, vanilla is most commonly found in oriental and gourmand fragrances. Beyond sweetness, it contributes creamy, balsamic and subtly spicy nuances that add warmth and depth to a composition. Vanilla is often used in the base of a fragrance, where it helps create a long-lasting and enveloping trail.

Some of the world's most iconic perfumes feature vanilla as a key ingredient, including Addict by Dior and Shalimar by Guerlain. Its versatility allows it to blend beautifully with florals, woods, spices, citrus notes and amber accords.
